italian chopped salad
I should be making a huge pot of soup for dinner to shake the cold weather, but I think the lasagna I have bubbling in the oven to go with this perfect Italian Chopped Salad will suffice. If my blog had a scratch-and-sniff option...I would definitely turn it on for the lasagna smell. WOW. I guess I should write the recipe for that as well! One day soon! Lasagna is amazingly hard to photograph and it is already dark out so, another time.
This is one of those salads that you can add pretty much anything you have in your fridge or pantry and it will turn out awesome. The dressing is inspired, slightly, by one of my favorite vinaigrettes my mom used to make growing up. If you notice from the photos I have beautiful cherry tomatoes, and it's the dead of January. My secret: go for the small, cherry tomatoes. They are sweet and tasty every time. My favorite brand is the Sunset: ONE sweet Tomato. They are gorgeously round and in a square container. Now you know.
- 1/2 cup red wine vinegar
- 1/2 cup, good olive oil, as Ina would say
- 1 tablespoon agave nectar
- 1 tablespoon dijon mustard
- 1 clove crushed garlic
- 1/2 teaspoon Italian seasoning
- freshly ground s & p
Add all ingredients to your jar of choice. Shake well.
Italian Chopped Salad
- 4 cups chopped romaine lettuce
- 1 cup halved cherry tomatoes
- 1 large radish, sliced
- 1/4 cup chopped pepperocini peppers
- 2 green onions, chopped
- 1/2 cucumber, peeled, seeded and chopped
- 3 slices provolone, chopped
- 3 slices salami, chopped
- vinaigrette to taste
Add all ingredients to a bowl. Toss with vinaigrette to taste. Serve chilled!
