So I feel like I am the only person on the planet that isn't into avocado toasts. I mean they honestly repulse me. The things I actually want on my toast: cheese, jelly/jam, butter, nutella, you name it, not avocado. This brings me to say that I really don't like avocados in any form other than my guacamole. It's a total texture thing for me. If they're on a sandwich, I take them off or ask them to be left off. I really hate how picky I am about the avocados because they stay on trend, if you will, in the world of food. I will never succumb to a trend for the sake of the trend (i.e. chockers, they belong in the 90's and need to stay there), but avocados are so good for you I hate to miss out.
BUT! Never fear avocados that come into my possession, I will transform you into the best version of guacamole and consume you as you should be...with a tortilla chip and loads of hot sauce.
We had taco Wednesday this week in our house, because ...why not? Which meant I got to have my perfect guacamole served along side a Skinny Girl Spicy Lime Marg and the latest episode of RHONY. I am a full-fledged, non-ashamed Bravo junky. Shout out to Andy Cohen for everything he has done for that network, particularly, the Housewives franchise. If you don't watch a single Housewives series, I highly, highly recommend the New York branch. There are so many draws for me to watch the show: the lifestyle of a New Yorker is so vastly different from anything I am used to; the women have created some extremely authentic friendships, most of which were formed before they were housewives; they party like I wish I could party and I could go on. Needless to say, I love my Wednesday nights when the latest episode airs.
Guacamole is one of those things for people who claim they "can't cook" for me to say, "I DON'T BELIEVE YOU!". While cooking may not be everyone's passion as it is mine, it can be so ridiculously easy that you should never feel scared out of the kitchen. Except when you slice your finger...like I have...twice this week...
- 2 ripe avocados
- 1/4 cup red onion, diced
- 3/4 cup tomatoes, diced
- juice of 1 lime
- 1/4 teaspoon garlic powder
- chipotle hot sauce, to taste
- chives for garnish
1. Cut avocados in half and dice them in the skin before removing. Smash the avocados to your own personal preference in a medium bowl.
2. Once you have your avocados to the texture of your preference, mix in the tomatoes, onions, garlic powder and hot sauce.
3. Serve with tortilla chips and enjoy!
