I am fond of almost anything pickled, except like a pig's foot. And yes, if you weren't aware there is such a thing. No hate on those that go that far, just not my cup of tea. When I pickle things at home, I only go as far as a quick pickling (these rhyming words!) not as far as canning to last a long time. They will last a week or so in the fridge!

I feel like radishes are so underrated. They are fabulous on a wedge salad, roasted with salt and pepper, toppings on pork carnitas, and pickled in this yummy salad just to name a few! Additionally, they hold up well in the fridge for a bit and they extremely affordable. Usually you can get a bunch for less than a dollar! 

I went to the store this weekend without much of a plan, which is so unlike me, but...sometimes you're passing your favorite grocery store and you con your husband into joining you, even if it's his least favorite thing in the world. Shout out to my amazingly patient husband! The things I bought this week that wound up in this recipe were: cabbage, carrots and ginger. Everything else to make the salad I already had on hand, including the radishes! After a little brainstorming, which I had a bad case of the Monday's and took me a bit...I finally came up with this refreshing citrus salad with picked radishes.

This citrus salad with picked radishes is so crisp and refreshing. If you wanted to add some protein, chicken would be an obvious answer, but I think shrimp would also be equally delicious! I left off the protein because I served this as a side salad, but I am definitely going to be using it the next time I have a little stir fry!

Ingredients

  • 2 cups chopped romaine lettuce
  • 1 cup chopped green cabbage
  • 1 cup carrots, in ribbons
  • 2 oranges, segments peeled
  • 1/4 cup pickled radishes, recipe follows
  • 3 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1/4 cup canola oil
  • 1/2 teaspoon ground ginger
  • 1/4 cup orange juice, saved from segmenting the 2 oranges
  • 10 grinds fresh pepper
  • 1/2 teaspoon sriracha 

Directions

1. In a small jar with a lid, combine soy sauce, minced garlic, canola oil, ground ginger, orange juice, pepper and sriracha. Shake to combine. Chill until serving. 

2. In a large bowl, combine lettuce, cabbage, carrots, oranges and the radishes. Top with citrus dressing. Serve immediately.

Ingredients

  • 1 bunch radishes
  • 1 inch fresh ginger root 
  • 1/2 cup apple cider vinegar
  • 3/4 cup water
  • 1 tablespoon agave nectar 

Directions

1. Using a Mandoline, or really precise knife skills, on the smallest slice option (1/8inch, I think) cut all of the radishes and the 1 inch of ginger root. 

2. Place your veggies in a canning jar, such as a mason jar. Pour all other ingredients in jar. Place lid on and shake. Refrigerate for at least 30 minutes prior to eating! Will keep in fridge up to a week.
