When there is ice cream in our refrigerator, which if I am being super honest, is most of the time, there's a huge chance it's going to be cookies and cream or classic vanilla. Thank goodness BlueBell is back on the shelves! There is not one thing that compares to it. Every time I have a scoop, or two or three...I think of my dear Pop Pop. When he was still with us, there was a 99.9% chance he would eat pasta every night and there was a 100% chance he would have a big bowl of BlueBell vanilla ice cream. Only BlueBell, never drifting away from his beloved brand. I can't blame him for loving that ice cream so, it is so damn good. 

After my peach peeling excursion and my peach pies I made last week, I had too many peaches peeled and I didn't know what to do with them. So, I decided to throw them in my blender to a smooth purée, pour that into a container and freeze! Success! I saved my peaches and have plenty for later. This also bought me some time to figure out what to do. 

So how does my peach purée and my beloved BlueBell vanilla come together you ask? This amazing and simple peach sauce. Let me tell you, I honestly felt like I had made fresh peach ice cream it was beyond delicious.

Ingredients

  • 1/2 cup peach purée
  • 2 tablespoons butter
  • 1 tablespoon agave nectar
  • 1 pinch ground cinnamon

Directions

1. Melt butter over medium-low heat. Add in peach purée, agave and cinnamon. Stir to combine. Bring mixture to a boil. Reduce heat and simmer until thickened. 

2. Serve on top of your favorite ice cream, pastry or dessert!
