There are few things more comforting than this classic Italian dish. Slow cooked meat sauce for spaghetti is the one thing that my husband asks for time and time again. Luckily, he married someone with a lil Italian in her blood. Although I have spent many times with my dad making sauce, I would like to think that it is inherently in my blood to excel in Italian cuisine. 

No matter the time of year, spaghetti with meat sauce can be one of the most versatile things you have in your freezer. While I do love a good meatball to go with my red sauce, the meat sauce allows you to use it other than just with classic spaghetti. It stores extremely well in the freezer, and I love using it to make things like lasagna, stuffed shells or manicotti, sometimes I even just make toast and throw it on top. Try it, I doubt you'll be disappointed. Toast with meat sauce is like a simple version of a meatball sub. Top it with a little parmesan cheese and you'll won't be denying that left over sauce in your fridge again.

spaghetti meat sauce

Ingredients

  • 1 lb ground beef
  • 5 garlic cloves, minced
  • 1 small onion, diced
  • 2 28oz cans crushed tomatoes
  • 2 tablespoons tomato paste
  • 1/2 cup freshly grated parmesan 
  • 1/4 cup basil leaves, torn
  • garlic powder
  • onion powder
  • dried oregano
  • dried basil
  • freshly ground black pepper
  • salt
  • 1 bay leaf
  • olive oil

Directions

1. In a medium skillet on medium heat, sauté the onions in 2 tablespoons olive oil, about 3-5 minutes. Add garlic and sauté until fragrant, about 1 minute. Remove onion and garlic to separate dish. In the same pan, brown the ground beef. When browned, remove from heat and drain fat.

2. In a slow cooker, stir together the 2 cans of crushed tomatoes and tomato paste. On top of the tomato sauce, sprinkle the following seasonings in a thin layer, or to taste to cover the top: garlic powder, onion powder, dried oregano, dried basil, freshly ground pepper, salt.* Stir to combine. 

3. Add the ground beef, onions, garlic, fresh basil, parmesan into the slow cooker. Stir with the tomato mixture to combine.

4. Cook on low for 6-7 hours. Stirring every hour, or more.

*This is the way I grew up doing this, there were never precise measurements for the seasonings. We go to taste!

feta tossed salad

Ingredients

  • 2 cups romaine
  • 1 carrot,  in ribbons
  • 2 roma tomatoes, diced
  • 1 stalk celery, chopped
  • 1 green onion, chopped 
  • 1/4 cup feta, crumbled
  • red wine vinegar
  • olive oil
  • salt and pepper

Directions

1. Toss all vegetables together in a medium bowl. Drizzle equal parts olive oil and red wine vinegar on salad. Toss. Add salt and pepper to taste.
