This drink. Oh my goodness, this drink. It's pretty much everything you need for a day at the pool. Speaking of the pool, we live on the first floor at our new apartment and it opens up right to the pool. Luckily, we're tucked back so in a way that our water obsessed dog, Scout, cannot see. I know this doesn't sound like a very big deal to most, but if she could see the water, she would sit there and cry to swim. Since we unfortunately, cannot allow her to swim (and honestly even if we could), I am so thankful for her being unable to see! We had a beach rental a few years back that had a pool and glass doors that lined the whole back side of the house. She went back and forth crying to swim. It's a serious obsession. She'd swim to her death, this pup. There is this awesome doggie section of a lake in town and when we go Scout thinks all of the balls are being thrown to her, steals them. You know, proud parenting moments for RT and I. Aside from Scout not being able to swim, we're using the pool a lot more in being so close to it. We especially love being close to the gas grill that is at the pool!

These Peach Coconut Daiquiris would be delicious non-alcoholic, too,if you want to make some for the kids, don't love to drink or are an expecting mama! I am seriously craving these now and I'll probably have to whip up a few when 5pm rolls around. The only disclaimer I would make for these Peach Coconut Daiquiris is that if you don't love coconut, obviously leave it out and it will still be delish! If you're a coconut lover like me, you'll be wanting those until the end of these painfully hot days we have left of summer.

Peach Coconut Daiquiri 

Ingredients

  • 1 cup frozen/fresh peach purée
  • 3 tablespoons sweetened shaved coconut
  • 1/3 cup lime juice
  • 3 tablespoons agave nectar, plus more to taste
  • 1 cup fresh/frozen peaches
  • 1 cup rum of choice
  • 2 cups ice

Directions

1. Blend all ingredients until smooth. Serve immediately. Top with additional lime wedge, coconut and peach.
